Beta-carotene is an orange lipophilic compound. It is the most common and the most stable natural colorant. It is abundant in many vegetables and fruits such as carrots, sweet potatoes, papaya, orange and green vegetables. Its colour value is very high. It is widely used as a food colorant for yellow, orange and orange-red colours.

Lutein

Lutein is a main pigment in the macula, a small area of the retina responsible for three-dimensional vision. Lutein cannot be produced by the human body, thus can only be replenished through ingestion. The UV light and blue light in sunlight can create many free radicals in the tissues if they get into the eyeball, leading to cataracts and macular degeneration. UV light can generally be filtered off by the cornea and the lens, but blue light can go through the eyeball, reaching the retina. Lutein in the macula can filter off blue light.
